* Apricot & Vanilla syrup

INGRÉDIENTS

1.5kg withe sugar
1L water
300g pitted apricots

1 vanilla bean

DIRECTIONS

Bring the water to a boil, then remove from heat.

Add the sugar and stir until fully dissolved.

Return to medium heat (light simmer).

Add the apricots and the vanilla bean split in half.

Let it infuse for 25 minutes over medium heat.

Strain through a fine sieve.

1,5kg sucre blanc
1 L d’eau
300g abricots dénoyautés

1 gousse de vanille

PRÉPARATION

Mettre à ébullition l’eau, puis couper le feu

Ajouter le sucre et mélanger jusqu’à parfaite dilution

Relancer à feu moyen (petite bulle)

Ajouter les abricots et la gousse de vanille coupée en deux

Laisser infuser 25 minutes à feu moyen
